Italian Curry with Flavoured Rice and Mashed Potatoes as a side.

Serves- 2 persons

Ingredients: •Finely Chopped Onions- 2 Big •Bell Peppers - 1 •Zucchini-1 •Basil Leaves- 10-12 •Oregano- 1 Tbsp •Mixed Herbs- 1 Tbsp •Chopped Garlic Cloves- 5-6 •Tomato Puree •Oil- 4-5 drops of oil •Amul Milk Cream - 3 Tbsp •Mayonnaise - 1 Tbsp •Cheese- 1 or 2 cubes •Brocolli - 1/4th of the whole •Cottage Cheese -100 gms •Corn- 1 cup of corn beans •Salt - 1 tsp or as required •Red Chilli Powder-1 tsp or as required

Procedure: • Shallow fry Cottage Cheese cubes and put it aside. •Roast the Broccolli and keep it aside. - To roast the brocolli first boil it in water with a pinch of salty and turmeric. - After boiling it roast it on a pan on medium heat in oil or butter. •Take a pan or pot and put 3-4 drops of oil or butter. •When the oil heats up put garlic cloves and basil leaves stir them, then add onions to it and stir till it’s orangish brown. •After that add other veggies to it such as Bell Peppers, Corn, Zuchinni one After the other and cook them. •After this add the Tomoto Purée and cook it well until it starts secreting oil and color changes to red. •Add Salt and Red Chilli Powder to it. •After it’s mixed well then add the Amul Milk Cream and Mayonnaise and cook it well. •Now add the Broccolli and the Cottge Cheese cubes. •Once the mixture gets properly cooked add Oregano leaves or seeds and Mixed Herbs . •Once all this is well cooked add water and let it cook properly for 5-10 minutes. •Garnish it wish Cheese and Basil Leaves.

•Now for the rice, cook the rice normally with Basil leaves and oregano to add up the desired flavour.





Tips: 1.The amount of salt, red chilli powder, oil or butter or the herbs can be according to person to person I.e you may add more or less the quantity as per your will. 2.This curry can also be used as a sauce with any form of pasta.
